Here are some ideas you can use with your leftover chicken once you’ve cooked it…
-Save the Bones- You can make a delicious chicken broth from these savory bones! Just pop those bones in the slow cooker with some onions, celery and seasonings and you’ve just saved yourself quite a penny on buying some chicken broth! Oh, it gets better… you can then freeze it for later use!
-Turn it into a Salad- Use some of the scrap meat to make a chicken salad! You can turn the leftover meat into a light lunch for work! No need to waste money on buying lunch, you can take your own J
-Create a Casserole- This is another simple way to make use of the leftover meat, which doesn’t require much! You can shred some of the leftover and add it to some rice to make a Chicken & Wild Rice Casserole, or add some cheese to make a Cheesy Chicken Casserole. What’s even better is that these types of casseroles can also be frozen so that
-Create a Soup- You can take some of the driest meat like the breast to use in a great soup! Here is an example of a basic soup you can make with some leftovers—just substitute the turkey for chicken!
-Use some scraps in a Quick & Easy Stir Fry- It doesn’t take much chicken to create a stir-fry, you can mainly load it with vegetables and just add whatever chicken you have to work with! Add it to some rice and you’ve got another hit!
I hope this makes you reconsider your meat selections at the grocery store! While we don’t always and only purchase whole chickens, we do make it a regular on our grocery lists. All it takes is a little planning ahead and you’ve got yourself 2-3 dishes!
