We recently tried our hands at creating our very own Egg McMuffins at home! Since we don't eat pork and are always looking at cutting costs, we found a successful way to make it work! These are good for freezing too... just moisten with water/pop them in the microwave and there you have it! This recipe is good for 12 sandwiches (just enough for us to enjoy some and freeze the rest).
Sausage & Egg McMuffins
1 dozen eggs
12 English Muffins
2 packages Jimmy Dean Turkey Sausage Patties (you'll have some leftover)
1-2 cups shredded cheddar cheese
butter
non-stick cooking spray
Preheat the oven to 350 degrees. Grease a cupcake/muffin tin and crack one egg into each muffin space. Add a little salt and pepper to each. Bake for roughly 20 minutes. Once done, set aside.
On a flat top griddle, add a little butter and toast the English Muffins. Once browned, you can begin to assemble the sandwich!
Simply add the shredded cheese (to your liking) to the base of the English Muffin. Add the sausage, the baked egg, and Muffin Top. *We even like to add some preserves or apple butter too!

I love the muffin tin idea! I've tried using those rings to make eggs for homemade McMuffins with total, runny disaster. I'm trying this!

I'm going to have to give the egg in the oven a try ... I usually just fold over the egg on the muffin/bagel to make it fit neatly :) One of my favorite things to make to avoid the drive thru (BK #1 with a coke is my downfall on the way to work in mornings!)
