Pear Preserves

I'm a little late on posting this, but a while back I decided to try my hand at making Pear Preserves!  I thought it would be a little different than my typical apple or strawberry preserves, and I wanted to see how they would like it.  Needless to say, it was a hit... particularly on some hot and fluffy biscuits!

3 cups sugar
3 cups water
6 medium pears, peeled and quartered (smaller chunks if you prefer)
½ cup sliced lemon (or a 2-3 Tbsp lemon juice)

Add 1½ cup sugar and water to a large pot and boil 2 minutes.  Add pears and continue boiling for another 15 minutes.  Add remaining sugar and lemon (or lemon juice), and while constantly stirring, continue cooking until the fruit is transparent.  Cover and leave in a cool spot overnight (12-24 hours).

Remove pears from the liquid and cook the syrup for approximately 5-10 minutes to thicken the syrup.  Add the pears to the jars and then add the syrup.  Process/Boil the jars for about 20 minutes.
