Overnight Cinnamon Sugar Coffee Cake

I don't know how I managed to find this recipe by Joy In My Kitchen, but it is GREAT!  I've made this a few times now and we LOVE it!  *I've tweaked it slightly as I used only all purpose flour instead of a mix of all purpose and whole wheat flour.


Cinnamon Sugar Coffee Cake
Overnight Cinnamon Sugar Coffee Cake 

Cake
¼ cup butter, melted
¼ cup applesauce
1 ¼ cup sugar
3 eggs
1 tsp. vanilla
1 cup milk
3 cups all purpose flour
1 tsp. salt
2 tsp. baking powder

Filling
¾ cup brown sugar
1 tsp. cinnamon
2 Tbsp butter {optional}

Glaze
¾ cup powdered sugar
1 Tbsp hot water
½ tsp. vanilla

CAKE- Combine the butter, applesauce and sugar in a large bowl.  Stir until well mixed. Next, add the eggs and vanilla and mix well. 

In a second bowl, combine the flour, salt and baking powder.

Add the dry ingredients to the wet ingredients, alternating with the addition of  milk. Stir until well mixed. Spread half of the batter into a well-greased 9x13 glass baking dish.

FILLING- In a small bowl, combine the brown sugar and cinnamon.  If interested, add  melted butter to the mix. Sprinkle half of the filling over the batter in the baking dish. Then, carefully pour the remaining batter over the filling. Sprinkle the remaining cinnamon sugar mixture over the top of the cake. Cover and refrigerate overnight.

GLAZE- In the morning, bake the cake, uncovered, at 350 degrees for 30-35 minutes; or until lightly browned and a toothpick comes out clean from the center of the cake. When you remove the cake from the oven, mix together the powdered sugar, hot water and vanilla. Drizzle over the cake as you serve it.

This is really interesting, leaving it overnight. It looks so good that it has to be a good way to make it.

Is there a specific reason for leaving it overnight, or is it that it is just easy to put it in the oven in the morning? Just wondering if I could just make it and pop it in the oven immediately, or if you have to let it sit.

Hi @royalegacy! I've always made it the night before as that's what the recipe called for (plus it makes for an easy mornining)... I don't think it would make a difference, but if you try it that way, stop back by and let me know how it turns out!
