Chicken Broth

There's really no magic recipe for this, I simply threw in what ingredients I had around the house to help season and give it flavor!  I've found that you can do this with home-cooked meat (obviously) but also with meat like an already cooked rotisserie chicken!  Simply freeze this and it's ready to go whenever you need it (holds in the freezer for up to 1 year according to the USDA)!


Easy Crock Pot Chicken Broth
1 whole chicken (de-boned, yet leaving some meat on the bones to provide flavor!)
chicken drippings
1-2 celery stalks, chopped
1 small onion, chopped
Salt (to taste)
Pepper (to taste)
2 Carrots, cut into chunks
Rosemary (optional, to taste)
Thyme (optional, to taste)
10-12 cups of water

Add all ingredients to a your crock pot and set to low heat.  Cook for 2-3 hours.  Use a strainer and ladle broth into it's storage containers.  

Allow the broth to cool in the refrigerator overnight, and skim the solid layer of fat from the top the following day.

YUM! You know I was just getting annoyed with having to buy chicken broth all the time. I looked bouillon cubes and ALL had msg. I might have to try this. I like to use rotisserie chicken for cooking. Thanks!

I make my own chicken broth all the time. It is sooooo much better than the canned stuff - more flavor, less salt, etc. I am currently out, thanks for reminding me I need to make some more this weekend.

i make chicken broth all the time, but have never thought to use my slow cooker for it. thanks for the great tip...and for sharing it with tuesday night supper club!
