Chicken & Dumplings

So I'm in the middle of my Baking Day for February meals.... first up, Chicken & Dumplings!!!

recipe taken from Women's Day Magazine

Chicken & Dumplings 
CHICKEN:
1 whole chicken
3 ribs celery, chopped
1 large onion, chopped
½ tsp garlic powder
2 tsp salt
¾ tsp pepper
2 chicken bouillon cubes
¼ tsp seasoning salt

DUMPLINGS:
3 cups self-rising flour
1/3 cup shortening
2 tsp butter + ¼ tsp salt
1 cup milk
½ poultry seasoning

CHICKEN- Place the chicken, celery, onion, bay leaves, bouillon, and House Seasoning in a large pot. Add water to cover the chicken and bring to a simmer over medium heat. Simmer the chicken until it is tender and the thigh juices run clear, about 40 minutes. Remove the chicken from the pot and let cool enough to handle (about 30 minutes).  Remove the skin and separate the meat from the bones. Return the chicken meat to the pot. Keep warm over low heat.


DUMPLINGS- Mix the flour with the poultry seasoning.  Cut in shortening until crumbly and stir in milk.  Mound together in a mixing bowl.  Knead the dough and form it into ball.  Flour the work surface and roll out the dough about 1/8 inch thick.  Cut the dough into 1-inch pieces. Drop dumplings in a few at a time into simmering broth.  Stir the chicken once the dumplings have been added. Cover and simmer, stirring a few times gently, for 25 minutes.  To serve, ladle chicken, gravy, and dumplings into warm bowls.

I love how everyone has a different version of Chicken and Dumplings. We make ours with the puffy dumplings. My mother-in-law makes her dumplings like yours. It's a very comforting meal :)
